This is one of my husbands favorite desserts!! Best served warm, and even better with a dollop of vanilla ice cream on top!
½ cup margarine
1 pkg. yellow cake mix
½ cup coconut
½ cup sugar
1 Tablespoon cinnamon
2 ½ cups sliced, pared baking apples
1 cup sour cream
2 egg yolks
Heat oven to 350 degrees.
Cut margarine into dry cake mix until crumbly.
Stir in coconut.
Pat mixture lightly in un-greased oblong pan (cake pan), building up the sides slightly.
Bake 10 minutes.
Arrange apple slices on warm crust.
Mix sugar and cinnamon together, sprinkle on top of top of apple slices.
Blend sour cream and eggs together.
Drizzle over top of apples.
Bake for 25 minutes or until edges are light brown, watch carefully.
Do not over bake.
